Smoked Salmon, Bacon & Avocado Wrap
This dish, featuring smoked salmon,
bacon, cucumbers and avocado only takes only 10 minutes. It's
very heart-healthy, thanks to the Omega-3 in salmon.
Ingredients
4 Ounces smoked salmon
1 Piece of thick-cut bacon
¼ Avocado
¼ Cucumber, shredded very thin
1 Tablespoon light mayo
½ Teaspoon lemon juice
1 Pinch of brown sugar
½ Teaspoon sesame seeds
Salt and pepper to taste
Directions
Add
the strip of bacon to a pan and cook over medium heat until crispy. Set aside
on paper towels to cool after cooking.
In
a bowl, whisk mayo, lemon juice, salt, pepper, brown sugar and sesame seeds
together until combined. Add the julienned/shredded cucumber and toss
everything to coat. Set aside.
Slice ¼ avocado into small pieces of avocado. Set aside.
Lay
smoked salmon flat on a plate. Place the julienned cucumber salad in the middle
and roll the smoked salmon around it, until you have a long cigar/burrito shape
with the cucumber salad on the inside. Lay the strip of bacon on top of the
fish roll and top with several slices of avocado. Serve immediately.
