Stir Fried
Sirloin Steak For the spice mix

Method
- To make
the spice mix, dry roast all the spices in a pan, then crush them coarsely
using a pestle and mortar. Sprinkle 2 pinches of the coarse spice mix on
each side of the steak and set aside for 5 minutes.
- Heat 1
tablespoon of the oil to smoking point in a frying pan, or a grill pan,
and sear the steak over a high heat on one side for 2–3 minutes without
moving it in the pan. Turn over on to the second side and cook another 3
minutes. Remove the steak from the heat and set aside to rest for 5
minutes.
- While the
meat is resting, heat the remaining oil in a second frying pan and add the
ginger, garlic, green chillies, curry leaves and onions. Sauté for a
couple of minutes until the onions have softened. Sprinkle in the salt and
the remaining ground spice mix and stir-fry for another 2 minutes. Reduce
the heat to medium, stir in the coconut milk and continue cooking until
the liquid evaporates.
- Slice the
seared steak into strips 1cm wide and toss in the pan. Sprinkle in the
coriander leaves, squeeze over the lime juice and serve immediately with
naan bread, paratha or steamed rice.
